Man, that smoke ring! Well done!Great point on the oven mess, and sorry you had to deal with that! I like putting mine in an aluminum tray to keep the juices in check. As far as resting, I dont even take it out of the wrap. I'll wrap it in a towel wrapped up and stick that in the cooler. For me, better yet, I'll keep the oven at 160 (the lowest mine will go) and let it rest in there to avoid cleaning up a dirty towel.Hopefully that helps, and knockout job on the brisket!
