Water can be cold or tepid-warm as long as it is not hot.Water is good enough to wash oil from pearl. You don't have any taste of oil after 'washing' pearls ;)

You can make about 10 to 15 big roses with a pound of alum
It remains beautiful for 3 weeks, much more than fresh flower without crystallization.Crystallized flower are fragile, some crystals may fall if you touch them. For a table decoration I recommend to put them under a glass dome to avoid people touching it.
You can use any oil as long as it is cold.
Unfortunately I've never succeed to grow crystals on flowers with table salt.

Yes, crystallized flowers remains beautiful for more than 3 weeks.
It is also called potassium Alum. It is mainly used as smell killer into homemade cosmetics or household products. It costs me about 7$ per pound.A substitute of Alum salt for crystallization is Borax, but I've never tried it on flowers.

Yes is works, but in my opinion the fruit taste is not strong enough once in pearl.
I found it in grocery store, but if you don't you can check on vegan stores as Agar Agar is a substitute of pork gelatin.

Yes you can, as long as it can be dissolved in fruit juice.
It depends how firm you want your pearls.The tip of asalvagno explains it very well, recommending between 0.5% to 2% of the liquid mass.
Such a good idea to use it to decorate cupcakes !!! (I mean for kids ... I am much to mature to do that ..;)I have been eating them after 24h and it was still good. I would not wait much more as it is still fresh fruits.
Kanten is similar to Agar Agar.I think that the spherification process would work with almost every liquid. I'm just not sure about the taste ;)

I've never tried without sugar. If you do, I would recommend to put less water to have a stronger fruit taste.

They are firm in the middle. The best taste was the one with lemon, because you have a strong fruit taste. I think gelatin would work as well but not I didn't try.

You can put more sodium bicarbonate at the beginning so you can reload just by adding colored vinegar.But it is as beautiful as before reload because the "old" vinegar is no longer moving.
