May I suggest trying an active yeast such as wine yeast or a turbo yeast. It costs the same amount, ferments more, ferments quicker and won't give you that white bread flavor. Next, don't use plastic for fermenting or aging if possible because the pineapple juice and alcohol will both dissolve some of the plastic which can cause cancer and/or a hormone imbalance. If you use boiled water it is less likely to because contaminated during fermentation. Finally, put a cleaned balloon over the bottle mouth or bung trap so that your cask can vent but not back feed and become contaminated. Sounds tasty, I can't wait to try it.
