Build suggestions: The biggest cost is the arm kit. You could delay buying this, and just get the RPi and other components and get the software working as far as getting the first (human) move recognised, followed by the chess engine coming up with the first robot move. After getting this working then buy the robotic arm kit.

Yes you can use a different arm. It would have to be at least as precise in repeated moves and have at least the reach. Different code would be needed to drive it. I will send you a PM about the code.
