Thanks for the kind words! The shapes are just so fun. And, definitely! Paper towels keep that odd, crusty layer from forming very nicely.

I'm actually in the US as well, and have been using a scale for measuring flour since it's so much more accurate, but here are the conversions: -450g bread flour = 3 cups-40g sugar = 1/2 cup
