I think the problem comes from the doubling. Although the instructions say to bring the final mixture to a rolling boil for 1 minute, this may not be enough time for a large batch to come to the required temperature. The mixture actually needs to be boiled to 220 degrees. In a small batch, a rolling boil for 1 minute is enough. In a larger batch, you have to boil longer. You really need a thermometer to to measure the temp, and pour out the jelly once it reached 220 degrees. As far as the jelly that you have already made, give it another day to see if it will set. If it doesn't, what I would try would be to empty the unset jelly back into a pan, bring it to a boil to 220 degrees. Then re-jar it.

I recently purchased an electric lemon juicer. I have a lemon tree, and with 300+ lemons to juice, any manual method just won't work. Instead of rolling the lemons to get more juice, I heat about 6 lemons in the microwave for 90 seconds, let them cool & then juice them.Don't forget to get the zest before juicing them lemons! The zest can be either frozen or dehydrated.
You are so right about the gloves & goggles! I make a reaper & raspberry jam & wear 2 pairs of gloves when chopping them. Then I wear goggles & a mask when cooking them. These peppers are not for fooling around with!
