Mistynry, The best way to adjust to high altitude would be to leave the macaroons out to dry for 60 min. You should leave them out to dry longer since the air is thinner.
View Instructable »Miriam, Thank you! If you were to use liquid food coloring, you should use less extract. For this recipe you should use 1/4 of a teaspoon food coloring and 1/4 of a teaspoon of extract. This will keep the consistency of the macaroons balanced!
