I too use minimal sauce on my pizzas. Too much tomato sauce on the dough makes for a soggy pie. I pour a little bit in the center of the dough and spread it out using the back of a spoon.Regarding toppings: I love veggies, so I load up my pies with a lot of diced vegetables, over the cheese layer. I also sprinkle in some fresh herbs from the garden. In general, using fresh stuff makes for the best-tasting pizza pie.
