The other option here would be to not thread the steel plate, but rather drill large enough to slide the bolt in, and put a nut on both sides. Then you could raise and lower the head by a fraction of the thread's pitch, by loosening one nut a tiny bit, and tightening the other nut. A "jam nut" would be half the thickness of a standard nut, if clearance underneath is a concern. When I make this, I will also look for a fine thread bolt to also give smaller adjustments. Can't wait to build my own!
