Hmm, that's a good question! I can't say I've ever tried a vegan version personally. I looked up a little bit about it just then and it seems like the best option for replacing the butter in lamination is a combination of shortening and coconut oil (which is quite firm at room temperature). For the butter in the dough itself, I am pretty positive shortening would work, as would most most non-dairy milks to replace the milk. The egg wash can be replaced with any melted vegan butter substitutes or margarine, or even vegetable oil in a pinch!Give it a try and let me know how it turns out for you!

Yes, so sorry! You're absolutely right! It's supposed to be sift the remaining icing sugar into the bowl with the icing sugar/almond flour mix. Edited to fix!
