Those look great! Yes, jalapeños can be fickle - some are hot, some not - and I think baking them takes a bit of the edge off. Good idea on the baking powder, you’re right it may lighten them up a bit. The jalapeños are such a moist baking vessel the cornbread bakes up more dense than cornbread baked in a pan. I’m glad you made them! Enjoy tweaking the recipe to get them just how you like them :)
