Intro: Not Nachos, for Dinner, a 2 for 1

Who doesn't like nachos? meat peppers, crunchy tortillas and cheese sauce, oh my ! But OH MY are they messy to eat ! Especially if like me you have a bit of a beard. The 2nd dish and the name for this "ible" came from my long suffering other half who didn't want nachos for dinner ....

STEP 1: Shopping List

approximately 1lb of ground meat of choice
package of taco or burrito seasoning
 onion
 green pepper
 roasted red pepper
 can of kidney beans
 cheddar cheese  (forgot to get that in the picture ! )
 tortilla chips
 egg noodles

STEP 2: The Cooking

chop your peppers and onion and get them in a frying pan, add in your ground meat, seasoning and can of drained beans, cook, covered, on medium, stirring occasionally, until the meat has lost its pink then bring to a boil for 3 minutes, reduce the heat and simmer until most of the juices have been absorbed. Set aside and allow to cool slightly then stir in your grated cheese.

  Bring a pot of salted water to a boil, drop in your noodles of choice and cook until as tender as you prefer

STEP 3: Time to Eat

not nacho 1 is pretty much like a chunky meat dip topped with more shredded cheese and jalapeno peppers and served with tortilla or doritto chips.

not nacho 2 is exactly the same meat mix but acts more like a sauce when placed over egg noodles, a dollop of sour cream was added AFTER my pic was taken...

 options . . . rice would make a good replacement for the noodles, there are a number of cheese sauces available in the stores you could use, use the filling in taco shells

 ps: Lemonie.. I used a REAL plate !

If you add a can of tomatos, this looks like my Chili recipe :P
You're right, it looks a lot like my chili as well except for the small portions and lack of any real spices and the addition of the beans (beans in chili?) I suppose it's really just a variation on a theme but them most "recipes" are. Thank you for commenting
