What materials do I need?

Can I do this with a trucks's bearing ?what thing Should I use to make it rotate, strong enough to sustain a person?

You can use a Lazy Susan from Ikea and add three wheels to the underside to help bear the weight.

You could use the rear hub of a front wheel drive car, you can pick one up from a car wreckers cheap. A couple of ply wood disc and you would have your turntable.

Just use a big lazy susan bearing. They hold up to 500 lb and are 18" across. Put a 2' square of plywood on top. Turn it by attaching a rope to a corner. All those ball bearings distribute the weight really well and it will turn easily even with a person on it.

You could make a plywood disk to stand on. Mount free-rotating casters on the bottom in several places. Salvage the casters from moving dollies. You can make a circular ring or track to keep everything spinning in one spot. And various methods to turn it, motorized or just with a rope or stick attached to it. Good luck.
