I would like to make a huge batch of enchilada sauce to have on hand whenever I need it.  How can I store/can/jar this sauce to ensure it doesn't spoil?

Heat is your friend. When the sauce is still boiling hot, pour it into a jar that has also been heated to boiling temps. Fill the jar to the top, leaving as little air as possible. Then seal it quickly. The vacuum that forms inside the jar when it cools should cause the lid to suck in a bit, and will probably make a "pop" sound when it does. That's all there is to it!

Important point in canning anything spicy-time makes it spicier.
