just start it in a cold oven........just cut off the top and rub it down with olive oil and back it till its done at 350......always start with a cold oven with a terracotta roaster
Normally you should only have to soak the terracotta roaster in water for about 30 minutes before you use it.
As far as roasting garlic, I've always just drizzled olive oil over it and baked it in the oven. I would imagine that if you used a herb-infused oil, it would really enhance tha flavors tremendously.
