How can i make muffins with fruit flavors? Answered

Okay so i want to make some muffins that have different flavors (i don't have much experience so i thought i would post it here and see what ideas you guys have to say)

I want to make muffins with the flavor

Should i just squash the fruits and pour it into the mix or is there a special way of doing it?



When I made my Blueberry Muffins, I use this recipe:

2 cups blueberries, divided
1 tsp sugar
2 1/2 cups flour
2 1/2 tsp baking powder
1 tsp salt
1 1/8 cups sugar
2 eggs
1/4 cup melted butter
1/4 cup oil
1 cup milk
1 1/2 tsp vanilla

3 Tbsp sugar
2 Tbsp flour
1 Tbsp Butter

Rinse 1 cup of berries and lay out to dry on a cooling rack. Cook the other cup of berries in a saucepan with 1 tsp sugar. Cook and stir for about 6-8 minutes, or till berries are mashed and mixture is thick (they kinda turn purple). Cool.

Mix flour, baking powder, and salt in a large mixing bowl. Gently stir in the rinsed and dry berries. In another bowl, mix eggs and sugar till thick. Add butter, oil, buttermilk, and vanilla. Fold into dry ingredients. Fill muffin cups 3/4 full. Spoon about 1 tsp of cooked berries on top of each muffin. Swirl in with a knife.

Combine topping ingredients till crumbly and sprinkle on top of muffins. Bake at 350 for 20 minutes.

Just add the fruit to the dough.

Probably no need to squash (although larger fruit would nee slicing or dicing).

May need to reduce the amount of water in the recipe as many fruits have lots of water in them.

Another option, inject jam with some sort of syringe after they're done cooking and cooling. ....mmmm....jam.....

Or fruit juice, if that's more convenient.

You may or may not want to adjust the amount of sugar to balance the sugar and/or sour flavors from the fruit. That's best determined by experimentation... or by searching for existing recipes, which should be easy between cookbooks and web.

Depending on which fruit, and how much flavor you want in the muffin, extracts are a good option. Fruits with subtle or a mild flavor may not come through the other ingredients in the muffin mix.
To enhance the flavor, in addition to fruit and the fruit juice, a small amount of the extract adds a lot of flavor. Not only that but you can mix some flavors, (I like a combination of dried cherries, with cherry and lemon extract in muffins) to make entirely new tastes.
