I neat idea that I have yet to see a prototype of is something that operates like a book, so instead of the laptop being on your lap you would hang onto it like a real book, obviously weight would be a factor, however a proof of concept would be pretty neat.

There are a host of problem associated with this like:
-What about a keyboard (touch screen)
-Weight (ummm 2 laptops.. yikes!)
-Power supply for 2 monitors

But encountering these problems is half the fun!
The laptop I am thinking of is right here

I would use one laptop as a control station, and attach the other one to some kind of mobile unit. I have built this type of system, and I'm working on documenting it on this site.

If it has a good old serial port on it, install IRCAS Alarm and turn it into a home security alarm system (thats what I did with an old laptop).

The ultimate digital picture frame. You can probablly also get a wooden box or tray from the dollar store with a little adjusting, to cover the keyboard.

you could use one as a brain for a robot and the other as the remote control.

Connect to your stereo (or amplified speakers and add Mediamonkey or iTunes to use one as a large keyboard-enabled ipod, allowing guests to select tracks from keywords..

You could "make" a tax deductible donation to an organization that will put them to good use. A little googling and you can probably find a used technology recycler in your area that is a non profit.
