I went with these ARDX kits from oomlout:
http://www.oomlout.co.uk/starter-kit-for-arduino-ardx-p-183.html

Spakfun do something similar.

The board in the kits is an UNO R3. The latest is the Due. It's faster and more advanced than the Uno because it's based on the ARM Cortex-M3 CPU. My advice is to start with the Uno because there's a ton of experiments, code and projects for it.

An Instructable of the ARDX kit experiments can be found here:

You want an Uno R3, you have to watch as some dealers are still selling the R2. Look at pictures on the Arduino web site, www.arduino.cc, to see the difference.) As far as a kit you will need to know what you want to do, which mpilchfamily and frollard have covered. Personally I had a lot of electronic components when I started using Arduino so I didn't get a kit and just bought the few components I needed.

Go to the Arduino web page and look up the specs on the different board. Then Start going through the available tutorials and you'll learn the kinds of things you can do with the board and how to interface hardware with it.

There are also guides to beginner projects on there...which guide you to the hardware you need.
