You use these little black-box devices called ESCs in the RC hobby:

You input any wide range of voltage sometimes as low as 6V to maybe as high as 25V or even more (depending on the ESC used. Small ones for RC stuff is about that range, 2S-6S LiPo.)

Assuming it is a 3 phase brushless motor like the outrunner motors popularly used for drones, and airplanes and stuff, They work by controlling power with the 3 push-pull outputs with an intelligent microprocessor such that the current through each of the 3 phases of the motor causes the rotor to rotate in the right direction with consistent amount of force. This is the basic operation for every brushless DC motor and even some 3 phase induction motors with solid state motor controllers, although they rely a slightly different principle physicly.

In the early days the first brushless series fractional horsepower motors replaced the brushes with cadmium sulfide controlled transistors and the brush commutator was a half shade tube spinning around a miniature light bulb to simulate the actual two carbon brushes.

Your motor is a three phase (equivalent 6 brush) and you are given three hall flux armature sensors to activate a triple H BRIDGE. The easiest speed control is by power, raise the voltage for more speed and lower voltage for less speed.

Sometimes you can Pulse-Width-Modulate (PWM) motor power to control both brush and brushless motors without loosing torque but watch out for excessive heat at low speed.

You'll receive a bunch of hits that you can evaluate to see if they offer the necessary fundamentals for learning how and maybe to see if you're up to the task if so inclined.. They may or not also suggest why buying the a specific component from a mfg is sometimes the BEST SUITABLE answer (Efficiency, reliability, durability, raw cost and dev cost, etc.).
