I serviced a food grade met-det high (only once) up in a two story structure where powdered garlic fell through a 6 inch = 15 cm square about 1" thick detector and any tiny metallic item falling through would cause a lower gate to shunt product to a waste bag.
Working with my eyes closed most of the time. It took most of my fee to clean my car and tools, the clothes were throw away ...

Just buy one of the hand held ones.
No point in making one as it would come more expensive and without the right equippment you will be unable to calibrate it.
