The vibrating motor from the phone would make a bristlebot.

Apart from that, since you haven't details the freebies, the answer is "probably".

well its in the eye of the beholder.
old phone:
-plenty of capacitors
-speaker
-microphone
-maybe some leds
-pushbutton switches
-transistors
-resistors
-transformer

cell phone:
-vibrator motor
-small speakers
-small microphone
-(in some cases) a fairly strong magnet in the top half
-small LEDS
-a rechargable battery
-bright white backlight LEDS
-sometimes small pushbuttons
-(on newer model cell phones) memory card slots

now there is quite a few electronics projects you can do with those parts, some just might need a better soldering skill than others.

Check the rubbish bins:). Most people don't put things like a video player or a large radio or even an old TV IN the bin, rather beside it. You can find almost anything inside an old (really old - 80s) TV, but finding the very TV should be considered great luck nowadays.
