Introduction: Basil Salsa

This is not an original recipe, I found it somewhere online, can't remember where unfortunately.

I made it for an office lunch once and everyone enjoyed it so I decided to make an instructable of it.

This recipe makes about 1 cup (approx 300mL) of salsa.

Step 1: Ingredients

3 or 4 handfuls of fresh basil

5 or 6 cloves of garlic (half a bulb)

3 or 4 tablespoons of capers

½ to ¾ cup of olive oil

Juice of 1 lemon

Salt and pepper to taste

Step 2: Blend

Peel the garlic, juice the lemon.

Put garlic, basil, capers and lemon juice into the blender with about half a cup of olive oil and start blending.

Step 3: Keep Blending

Blend up to a smooth paste-like consistency, add more olive oil if you need to.

Step 4: Add Salt and Pepper

Add salt and pepper to taste and blend for another half a minute. I didn’t have to add any salt as the capers added enough salt for me.

Step 5: Serve

Transfer to a bowl and garnish with a sprig of basil.

This salsa can also be used as a marinade, just add a few tablespoons to a bowl of meat, mix it all up and leave in the fridge for a few hours before cooking.
