Introduction: Berry Terrine

This Berry Terrine is very easy and can be prepared in advance. Depending

on the seasons you can use any kind of berries, I just had strawberries and blueberries available. It looked great and it was so fresh!

I only used just the smallest amount of sugar, because the fruit juices usually are already sugared. The terrine was not sweet, but really fresh and tasty!

Step 1:

For a long Cake dish, as Dessert for approx. 10 Persons:

10 g Gelatin Powder

500 ml Red Grape Juice (you could also use clear grape juice, then the color of the berries come out even nicer)

100 g Sugar

1 kg different colored Berries

Step 2:

Sprinkle the gelatin powder onto 20 ml of the grape juice and let stand for 2-3 minutes.

Heat the rest of the grape juice slightly (don't boil!) take from the cooker and add the gelatin. Whisk until dissolved. Cut the berries into smaller pieces if needed and put them into the cake dish. Pour the grape juice over them and push the berries into the liquid to make a more or less flat surface.

Step 3:

Wrap into cling-foil and let rest in the fridge over night.

Step 4:

The next day carefully remove the terrine from the cake dish, if it

sticks you can set it into warm water for just a few seconds, then it will drop out easily.

Step 5:

Cut the terrine into nice slices and decorate with berries or whipping cream.
