Introduction: Chewy Craisin Oatmeal Cookies

I love Craisins, I love oatmeal cookies.  I figured I'd combine them for this delicious treat.  A mixer come in handy as the dough is pretty thick.

Step 1: Ingredients

This recipe has been split in half and yields just over a dozen 4 inch cookies.

Ingredients needed:

1 stick of butter

1/2 cup sugar

1/2 cup brown sugar

1 cup flour

1/2 teaspoon baking soda

3/4 teaspoon cinnamon

1 1/2 cups oats

1/2 cup Craisins

Step 2: Dough

Cream the butter and sugars together.  Use a mixer if possible. 

Add the egg to the creamed butter and sugars.

In another bowl add dry ingredients together.  Stir the flour, baking soda, cinnamon and oats until well mixed.

Slowly add the dry ingredients to the mixer while on low to fully integrate the flavors together.

Add the Craisins.

Refrigerate for at least an hour. 

Step 3: Shaping

Preheat the oven to 375 degrees.

Line a cookie sheet with parchment paper.

Roll about a tablespoon of dough into a ball  and flatten slightly onto the cookie sheet spacing them about 2" apart.

Step 4: Baking

Bake for 10-12 minutes.  My oven is a bit wonky so I rotated and baked them for another 5 minutes. 

Allow to cool for 5 minutes before placing on a  rack.  Or just slide the parchment paper off the cookie sheet.

Allow 1 to 2 more minutes (if you have the will power, which I did not) before biting into a Delicious Chewy Craisin Oatmeal Cookie!
