Introduction: Haskap Berry Crumble

Haskaps are a berry I had never heard of until our local berry farm invited people out to pick for free. I got to keep half of what we picked. I am so glad that I did as haskap berry crumble is one of the best desserts I have ever made! The haskap berries taste like a raspberry and blueberry smashed together. I served it all warm and gooey with vanilla bean ice cream.

Step 1: Ingredients

  • 6 cups haskap berries
  • 3 tablespoons cornstarch
  • 2/3 cup sugar
  • 2 tablespoons lemon juice
  • 1 cup oats
  • 1 cup flour
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 teaspoon cinnamon
  • 10 tablespoons butter, divided

Step 2: Berries

Preheat oven to 350°F. In a large bowl, mix together the haskap berries, cornstarch, sugar and lemon juice. Spread in the bottom of a 9x13 inch pan.

Step 3: Crumble

In the bowl of a food processor, add the oats, flour, brown sugar, white sugar and cinnamon and pulse to combine. Add 8 tablespoons of the butter to the food processor and pulse until the mixture resembles large, coarse crumbles. Spread the crisp topping over the prepared berries.

Step 4: Layering

Spread the crisp topping over the prepared berries. Dot the surface with the remaining butter and bake in preheated oven for 45 to 50 minutes, until topping is golden brown. Cool to warm before serving.
