Introduction: Henderson's Sauce.

   Hello, I have created this Instructable to show you how to make our fantastic "Henderson's Sauce". Its a magnificent sauce that goes amazingly with pretty much everything. From simple tiger bread to Italian chicken this sauce can cope with it all. It keeps in the fridge for weeks, inexpensive, contributes to one of your "Five-a-Day", anyone can make it, uses spare and/or leftover fruits from previous recipes, No Salt and above all, it tastes delicious :P

   I will explain step by step with the aid of pictures on how to replicate the Sauce along with tips on future modification. I hope you enjoy reading this instructable and I hope you make it yourself to taste how amazing it actually it ;) Thanks.

Step 1: Gather the Ingredients.

In this step it will be as simple as gathering the ingredients required (including modification ingredients) in order to replicate the sauce.

You will need:
• 1 Onion
• 2 to 3 Red or green peppers
• 1 Apple
• 2 or 3 Tomatoes (I used 1 large and 7 small ones to compensate)
• 4 Cloves of Garlic
• One cubic inch of Ginger (Or 1teaspoon of Ginger powder)
• Olive Oil
• Mixed herbs (about 1 teaspoon)
• Chilli Powder (about 1 teaspoon)
• Brown Sauce (Or any substitute, e.g. Barbeque sauce) ( 2 tablespoons)
• Lemon Juice (1 tablespoon)
• Worcestershire Sauce (optional) (1 tablespoon)
• Tomato Purée (1 tablespoon)
• White or Brown sugar (1 heavy tablespoon or 1 brown sugar or 2 white sugar's)
• Pepper (ground)
• ~300ml Salsa Mix (Mild, Medium or Spicey depending on intended effect)
• Any “wet” classed fruit from leftovers (Wet fruit; grapes, watermelon, cucumber) (I did not include any of these in my recipe)

These are all the ingredients you will need to collect in order to create this recipe.

Step 2: Basic Ingredients.

   After cleaning the worktop for preparing this Sauce, it is ideal that you have an adult with you at all times if you are under age to use sharp objects and it is imperative that you have fun! :D

Once the tops are all clean, you will need to get out a chopping board. On this board you will begin to:

o Chop the Onion tunic (onion head) and Basal Plate (root stump) off
o Slice carefully into about 10 pieces
o Throw into deep pot with a dollop of Olive oil

o Cut pepper Peduncle (Stem) and the Calyx (Inner white Peduncle)
o Carefully slice into about 10 pieces
o Throw into deep pot

o Roughly de-skin a cubic inch of Ginger
o Chop into small pieces
o Throw into deep pot

-=If using Ginger powder, leave this step out and throw in 1 teaspoon of powder=-

o Get 4 garlic cloves and smash/press with side of blade carefully to split off the "Paper".
o Peel away “Paper”
o Throw into deep pot

o De-core an apple carefully with either the specific tool or “Dodge-cut”
o Cut into about 5 pieces
o Throw into deep pot

o Acquire 2 to 3 tomatoes and knuckle (top) face down, carefully cut down into the tomatoes
o Cut into about 10 pieces per tomato
o Throw into deep pot

o You would now add in any additional "Wet" fruit that you would like to use.

Step 3: Simmer for 5 Minutes.

   Leave the pot to sit on the stove to simmer for about 5 minutes with the lid on.

Step 4: Add More Ingredients.

   After it has been simmering for around 5 minutes, it is time to add some other ingredients. Add all these being;

o 1 teaspoon of Ginger powder (If you aren't using solid ginger)

o 1 teaspoon of Chilli Powder into the mix.

o 1 teaspoon of mixed herbs into the mix.

o Add around 1 tablespoon of Worcestershire Sauce

o Add small amount of ground pepper into the mix.

o 1 tablespoon of Brown sauce (or equivalent e.g. Barbecue sauce) into the mix.

 o Add around 1 tablespoon of Lemon Juice

o Add around 1 soup-spoon of sugar (1 soup spoon brown or 2 soup spoons white)



Step 5: Leave Again to Simmer for Another Few Minutes.

   Leave the pot on the stove for another couple minutes to simmer with the new ingredients in. Stir the mix well before you begin to simmer it again to aid the process. Put the lid back on.

Step 6: Add Last Ingredients.

   This stage we will add the Salsa mix and the Tomato Purée. Now add;

o Around 1 soup-spoon’s worth of Tomato Purée

o Add a 300ml jar of Salsa mix

o Then fill the jar with water, put the lid back on and shake (gets all the leftover bits). 

o Pour into the mix

o Stir and leave to simmer for about 20 minutes


Step 7: Blitz!

   Using a blender, blitz until its smooth like ketchup.

Job done.

Serve and enjoy :)

This sauce can be kept in a fridge for several days or frozen in portion size pots. 

As you can see, I couldn't wait, so I had it for dinner immediately :D
