Introduction: My Love for Chicken Is Real: Chicken Chopper Rice With Gravy

Today's recipe is an Indo-Chinese Main course that I absolutely love making and eating. Chicken Chopper Rice is a combination of Chicken fried Rice and Chicken gravy and it is a super famous street food here in Mumbai. It is also called chicken combination rice. Chicken chopper rice is very yummy and absolutely easy to make. With a few ingredients, you can make this amazing dish instantly. It is called chicken chopper rice because all the ingredients used in the recipe are finely chopped. This recipe is a proper street-side recipe. So it's going to be super delicious. This dish definitely wins hearts. So, without any further ado, Let's start with the recipe.

Supplies

  1. Rice
  2. Chicken
  3. Eggs
  4. Onion
  5. Ginger
  6. Garlic
  7. Green chili
  8. Spring onion
  9. Cabbage
  10. Carrot
  11. Capsicum
  12. French Beans
  13. Salt
  14. Pepper
  15. Red Chili Powder
  16. White vinegar
  17. Soy Sauce
  18. Red Chili Sauce
  19. Green Chili Sauce
  20. Schezwan Sauce
  21. Corn Flour
  22. All-purpose flour
  23. Orange food color (Optional)

Step 1: Soak Rice

  1. Take 1 cup of Long grain Basmati rice. You can take any long grain rice.
  2. Wash it 2-3 times with water.
  3. Soak it in water for 30-40 minutes.

Step 2: Cook Rice

  1. Heat water in a pot.
  2. Add 1 teaspoon of salt and 1 tablespoon of oil.
  3. Let the water come to a boil.
  4. Add in the soaked rice.
  5. Cover and cook the rice for 5-7 minutes.
  6. Don't overcook the rice. Cook till it's 80-90% cooked.
  7. Once done, Turn off the flame.
  8. Strain the rice.
  9. Keep it aside to cool it.

Step 3: Chopp Veggies

Finely chop the following vegetables:

  • Cabbage (100-150 grams)
  • Carrot (1 medium-sized)
  • Capsicum (1 small-sized)
  • Onion (1 medium size)
  • French Beans (100 grams)
  • Garlic (12-15 cloves)
  • Ginger (20 grams)
  • Green chilies (2-3)

We are going to use half of all these veggies for the rice and half for the gravy.

Step 4: Chop Chicken

  1. Take boneless chicken. Wash it well.
  2. I have taken boneless chicken breasts. (300-350grams)
  3. Chop it into 1-inch pieces. Refer to the picture.

Step 5: Marinate Chicken

In a mixing bowl, add the following ingredients to the chopped chicken:

  1. Egg -1
  2. Soy Sauce (1 tablespoon)
  3. White vinegar (1/2 tablespoon)
  4. Salt (as per taste)
  5. Black pepper powder (1/2 teaspoon)
  6. Red chili Powder (1/2 teaspoon)
  7. All-purpose flour (2-3 tablespoons)
  8. Orange food color (A pinch)

Mix everything well. Keep it aside for 5-15 mins.

Step 6: Fry Chicken

  1. Heat oil in a pan for deep frying.
  2. Once the oil is hot, add the chicken chunks one by one.
  3. Deep fry them till they're fully cooked. (This would take about 4-5 minutes)
  4. Strain the excess oil with tissue paper.

Step 7: Make Scrambled Eggs

  1. Take 3 eggs in a bowl.
  2. Add 1 teaspoon of salt.
  3. Whisk the eggs with the salt. (You can also add black pepper powder if you want.)
  4. Heat a pan.
  5. Add 2 tablespoons of oil.
  6. Add in the whisked eggs.
  7. Keep mixing and scramble the eggs.
  8. Once done, remove it on a plate.

Step 8: Chopper Rice

  1. Take a Chinese wok or any deep pan (Kadhai).
  2. Heat 3-4 tablespoons of oil.
  3. Add Green chilies.
  4. Let it sputter.
  5. Add in the chopped garlic and chopped ginger. (Save half for the gravy.)
  6. Saute' it for a few seconds.
  7. Let the garlicky flavor get into the oil.


Step 9: Add Chopped Veggies

  1. Add the rest of the veggies (Onion, Cabbage, Carrot, french beans, Capsicum, Spring onion greens). Save half for the gravy.
  2. Cook it for a minute.
  3. Add 1/2 teaspoon of salt (As per taste).
  4. Add 1/2 black pepper powder.
  5. Mix it well.
  6. Cook for another 20-40 seconds.

Step 10: Sauces

  1. Add 1 tablespoon of Soy sauce.
  2. Add 1 tablespoon of green chili sauce.
  3. Add 1 teaspoon of white vinegar.
  4. Mix everything well.
  5. Cook the veggies with the sauce for 1-2 minutes.

Step 11: Add in the Rice

  1. Add the cooked rice.
  2. Mix it well with the veggies and sauces.
  3. Cook it on high flame for 1-2 minutes.

Step 12: Add Fried Chicken and Scrambled Eggs

  1. Chop 1/3rd of the fried chicken and add it to the rice.
  2. Add half of the scrambled eggs.
  3. Mix it well with the rice.
  4. The Chopper rice is ready.

Step 13: Time for Some Gravy

  1. Take another pan.
  2. Add 2-3 tablespoons of oil.
  3. Heat it.
  4. Add the rest of the chopped green chilies, Garlic, and ginger.
  5. Saute it for a minute till the raw smell goes away.

Step 14: Add Chopped Veggies

  1. Add the rest of the veggies one by one.
  2. Cook it for 1-2 minutes.
  3. Add 1/2 teaspoon of salt.
  4. Add 1/2 teaspoon of black pepper powder.
  5. Mix it well.
  6. Cook it for another 30-40 seconds.

Step 15: Add Scrambled Eggs

  1. Add the rest of the scrambled eggs.
  2. Mix it well.

Step 16: Seasonings

  1. Add 1 tablespoon of soy sauce.
  2. Add 1/2 tablespoon of white vinegar.
  3. Add 1 tablespoon of green chili sauce. You can use red chili sauce instead.
  4. Add 2-3 tablespoons of schezwan sauce.
  5. Mix everything well.
  6. Cook the veggies with the sauces for 1-2 minutes.


Step 17: Water

  1. Add 1 1/2 cups of water.
  2. Let it come to a boil.


Step 18: Slurry

  1. Make a slurry. (Take 1 tablespoon of corn flour, Mix it with 1/4th cup of water.)
  2. Add the slurry to the gravy.
  3. Mix it well.
  4. Make sure there are no lumps.
  5. Let the gravy thicken.

Step 19: Gravy Is Ready

  1. Once the gravy is thick, turn off the flame.
  2. Add in the fried chicken.
  3. Mix it well with the gravy.
  4. Garnish it with some spring onion greens.

The gravy is absolutely ready

Step 20: Bring It Together

Our Chicken Chopper rice is absolutely ready. It looks lovely and smells delicious.

Serve it hot and garnish it with some spring onion greens.
