As I have said earlier in my Instructables For me Soups = Health + Taste + comfort. I like making and eating soups because they are healthy and super easy to make. Best when it's snowing or raining outside. Enjoy this bowl while watching your favorite rom-com on Netflix. So If you are looking forward to having soup, then here is one of the best chicken soup recipes for you. This is a super easy recipe that takes around 30 minutes to make. With few ingredients, you can make this yummy, hot, tasty, delicious, and healthy chicken vegetable soup. Without wasting any time get your chicken, and veggies and start making this.

Supplies

Ingredients:

  1. Chicken
  2. Broccoli
  3. French beans
  4. Carrot
  5. Onion
  6. Garlic
  7. Mushroom
  8. Green peas
  9. Corn
  10. Salt
  11. Black pepper powder
  12. Chili flakes
  13. Oregano
  14. Butter
  15. Milk
  16. All-purpose flour
  17. Fresh Cream

Step 1: Boil Water

  1. Take a pot of water.
  2. Heat it.
  3. Add 1 teaspoon of salt. (As per taste)
  4. Let the water come to a boil.


Step 2: Cook Chicken

  1. Take the chicken and boil it in the water. I have taken 1 chicken breast (200-250 grams).
  2. Cover and cook for 5-7 mins. (Till it's fully cooked.)
  3. Once done, Turn off the flame and let it cool.


Step 3: Shred Chicken

  1. Once it is cooled, shred the chicken with the help of a fork or your hand.
  2. Keep it aside.

Step 4: Prep the Veggies

  1. Slice the mushrooms. (60-70 grams)
  2. Chop a small carrot. (80-100 grams)
  3. Chop french beans. (50-60 grams)
  4. Chop broccoli. (80-100 grams)
  5. Chop 1 small onion.
  6. Chop 1 small garlic. (10-12 cloves)

The prep is done. Let's begin cooking.

Step 5: Garlicky Flavour

  1. Take a deep pan/ pot.
  2. Heat 2-3 tablespoons of butter.
  3. Let it melt. (Be careful and don't burn it.)
  4. Once melted, add the chopped garlic.
  5. Saute it for a minute, till the raw flavor goes away.
  6. Add the chopped onions.
  7. Cook for 1-2 minutes till the onions get translucent.

Step 6: Carrot Beans

  1. Add the carrot and french beans.
  2. Mix mix mix
  3. Cover and cook for 2 minutes.

Step 7: B'Rock'Oli

  1. Add the chopped broccoli.
  2. Cover and cook for a min, till the broccoli turns a bit soft.

Step 8: Make It Colorful

  1. To make the soup colorful, add green peas and corn.
  2. Cover and cook for another 2 minutes.

I have used frozen peas and corn, you can use fresh too.

Step 9: Let's Make It Creamy

  1. Add 1 1/2 tablespoons of all-purpose flour.
  2. Mix it with the veggies.
  3. Cook for a minute.


Step 10: Milkyway

  1. Add 2 cups of milk gradually.
  2. Simultaneously mix it.
  3. Let it come to a boil.

Add more milk to adjust the consistency. I have added another 1 cup of milk to it.

Step 11: Mushroom Magic

  1. Add the sliced mushrooms.
  2. The mushrooms are uncooked at this point, so make sure it is very well cooked.
  3. Mix it well.
  4. Cover and cook for 2-3 minutes on medium flame.

Step 12: Chickenn

  1. Add the shredded chicken.
  2. Mix it well.


Step 13: Seasonings

  1. Add salt as per taste.
  2. Add 1 teaspoon of black pepper powder.
  3. Add 1 teaspoon of chili flakes.
  4. Add 1 teaspoon of oregano

Add other seasonings if you want (Thyme, garlic powder, etc.)

Mix everything well.

Cover and cook for10-12 minutes.

Taste and adjust the seasonings and consistency as needed.

Step 14: More Cream

  1. Add 1/3rd cup of fresh cream.
  2. Mix it well.

The soup is absolutely ready!

Step 15: Soup Is Ready

Our creamy chicken soup is absolutely ready is like less than 30 minutes. Garnish it with some fresh cream and coriander leaves. Dig in and enjoy with toasted bread. I promise you are going to enjoy so much while eating this. You will make it again and again. Super easy to make, Super yummy and so colorful to look at. The goodness of all veggies and the warmth of comfort food in a single bowl.
