Introduction: One Pot Vegetable Paneer Pulao

Pulao is a one pot rice dish made by cooking fragrant basmati rice with sweet-smelling flavors, spices. There are numerous sorts of pulao plans made in India like vegetable pulao, paneer pulao, green peas pulao, tawa pulao, Coconut milk pulao, zarda pulao, Kashmiri pulao and Chicken pulao. Pulao is one of the most cooked rice dishes in India. It is a very simple and easy dish to make. it is a go to recipe. we have made this recipe with a few ingredients and managed to keep Indian traditions alive with its amazing taste and concluded it in one pot challenge!

Step 2: Prep Veggies

You can add or subtract veggies according to your choice.

For my version, I have added:

  • 2 small carrots.
  • 2 medium sized onions.
  • 8-10 French beans.
  • 1 big potato.
  • 350-400 grams of cauliflower.
  • 1 cup on green peas.

Since this is a Vegetable Paneer Pulao, along with veggies we will also use paneer in the recipe. I have taken around 200g (7Oz)of Paneer (cottage cheese). Cut them into small cubes as shown.

Here the preparation part is all done and we can move on the cooking part.

Step 3: Shallow Fry Paneer (cottage)

First we will shallow fry the paneer (Cottage Cheese).

For that we will follow this procedure:

  • Add 2 tablespoon of vegetable oil/ olive oil in a pan.
  • Add the paneer cubes and fry them for about 3-4 minutes.
  • Fry them till they turn slightly golden brown from all the sides.
  • Once done take them out from the pot.

The Paneer cubes are ready, we will set them aside and proceed to next step.

Step 4: Spice It Up!

In the same pot, there will be still some oil left from previous step, which we will use for spices.

Add all the whole spices to the oil and sauté it for a min

The whole spices I used are:

  • 2 bay leaves
  • 2 green cardamom
  • 1 black cardamom
  • 5-7 cloves
  • 5-7 black peppercorn
  • 2 - 1" long cinnamon stick

All these whole spices will give great flavor to the pulao and fragrance.

Step 5: Fry Veggies

  • Add finely chopped onions and sauté for about 2 minutes till they turn slightly golden brown.
  • Add the potatoes, green peas, carrots, beans and Cauliflower.
  • Mix it well with the onions and let it cook for 4-5 minutes.
  • Add salt as per taste.
  • Cover the pot and let the veggies cook again for 5-7 minutes.
  • After this add the fried paneer cubes.

Step 6: Add Rice!

The veggies are cooked, now comes the final step.

Add 2 cups of cooked basmati rice ( This long-grain rice has a floral aroma and nutty flavor and is used in biryani's and pulao) Mix everything well. Vegetable paneer pulao is ready, serve hot with raita!
