Introduction: Pumpkin Scones ~ Lalaloopsy Baking Oven

Autumn is finally here! Well, it was here nearly two months ago, but where I live, it's JUST beginning to feel like it. The weather has been pretty mild, even a tad bit warmer than spring temperatures. It seems like Summer never wanted to go away, which saddened me.
So, to celebrate the feel of fall, I thought I'd make a fun, themed treat in my Lalaloopsy baking oven.... PUMPKIN SCONES! These are perfect for the season, because it's pumpkin season...ahaha. Not only that, Thanksgiving is next week! This would be perfect to share on that lovely day ♥
Kids will love these! They look and taste great, and remind me so much of the Starbucks pumpkin scones. These aren't complicated to make, and require basic ingredients, like pancake mix!

These can definitely be made in the Easy Bake Oven/Ultimate Oven as well!

FUN FACT: I came up with this recipe yesterday.Yep. So so soon. It came across my mind as I was trying to come up with a Thanksgiving themed video. I originally had thought of pumpkin biscuits, but then Starbucks popped in my head and I thought about their scones. It would be a much more unique idea, super cute, and I rather have something sweet than savory. To me, the idea of pumpkin not in a dessert was odd, hehe.

Step 1: Ingredients

SCONES
1/4 CUP pancake mix (I prefer complete, which is any mix that you only need to add water to)
1-2 TBSP milk
1 TBSP pumpkin puree (not pumpkin pie filling)
1/4 TSP pumpkin pie spice
1 TSP brown sugar
1/4 TSP vanilla extract

ICING
1/2 CUP powdered sugar
2 TSP milk
1/8 TSP vanilla extract
2 TSP cream cheese (optional)
pinch salt

Step 2: Prepping the Batter

Combine the dry ingredients (pancake mix, pumpkin spice, and brown sugar) in a bowl.

Combine the wet ingredients (pumpkin puree, vanilla, and milk) separately, only adding 1 TBSP of the milk.

Pour the wet into the dry, mixing with a spatula until they are just combined. If your batter is a bit dry, add the second tablespoon of milk. You should be looking for a thick, biscuit batter-like consistency.

*Be very careful not to over-mix, as this will effect the texture of your scones!*

Step 3: Baking Your Scones!!

Grab a sandwich-sized ziplock bag, and fold over about 1-2 inches of the top.

Scoop all of the batter into the bag and push it to one end. Twist the top of the bag and cut about 1/2 inch of the tip (as shown on picture)

Grease your Lalaloopsy baking pan with non-stick cooking spray. (optional: cutting a bit of parchment paper or a cupcake liner to fit the pan, then greasing it)

Pipe two wide triangles onto your pan, about an inch in height and 2 inches in width.

They should not be higher than halfway up the pan.

Bake your scones for 8 minutes
Cool for 10 minutes

Repeat these steps for the remaining batter!

Step 4: Icing Your Scones and Enjoying Them ^_^

Combine all icing ingredients with a whisk, until it's very smooth. Make sure to add the milk slowly, as you don't want to end up with watery icing!

*NOTE: If you use cream cheese, the icing will not harden and set. It will stay a bit soft*

Drizzle the icing over your cooled scones however you'd like, and enjoy!
