About: Baking Lover. ♥ Insta: https://instagram.com/malyskitchen ♥

Hello everyone! I am so excited to share this recipe for you all. These are vegan chocolate chip cookies, that don't taste vegan at all! They are moist, chewy, and delicious, perfect with a glass of milk.

I found this recipe after looking around for a simple recipe for Vegan cookies. I was craving a late night snack, but didn't want anything too complicated or that required ingredients I wouldn't normally have.

This is pretty basic to make yet not at all bland ^_^

I hope you guys like these cookies, and try making them as well! You don't have to be vegan ;) If you do post a picture, and tag me on my Instagram (@malyskitchen) so I could see your creations!

Step 1: INGREDIENTS ♥

*Adapted from http://www.dailyrebecca.com/2013/03/the-best-vegan... *

-2 CUPS all purpose flour
-1 TSP baking soda
-1 TSP baking powder
-½ TSP salt

-½ CUP vegan butter (such as Earth's Balance, as shown in photo)
-1/2 CUP coconut sugar + 1/2 CUP light brown sugar (If you'd like you can use all coconut or all brown sugar. If you only have white sugar that is fine as well)
-¼ CUP almond milk (or any dairy-free milk of your choice)
-1 TBSP vanilla extract
-1 CUP vegan chocolate chips

Step 2: Mixing the Dry Ingredients!

In a medium sized bowl, combine all purpose flour, baking soda, baking powder, and salt

Set aside.

Step 3: Mixing the Wet Ingredients!

Add the sugar (or sugars) into a separate bowl, followed by the butter. Make sure the butter is at room temperature or it will be difficult to stir together ^_^

Whisk together until combined.

Add vanilla, and almond milk.

Mix everything together until light and fluffy.

Step 4: Making the Cookie Dough!

Add the dry ingredients to the wet and combine well until the flour is JUST incorporated. You want to avoid over mixing, because that will cause the mixture to toughen up. You want moist cookies!

Fold in the chocolate chips.

Now your batter is ready for baking!

Step 5: Bake the Cookies!

PREHEAT YOUR OVEN TO 350 degrees F.

Spray a cookie sheet with non-stick cooking/baking spray, or grease with butter/oil.

Drop the cookies by tablespoon, leaving about 1-2 inches space between them.
(If you'd like to make larger cookies, use 2 tbsp cookie dough..just make sure to add 3-5 min to baking time)

Bake the cookies for 10-12 minutes, until lightly golden brown on the edges.

Remove the cookies from the oven, cool for 10-15 minutes.

Step 6: Serve & Enjoy! ^_^

The cookies are now ready to serve! They are best eaten warm the same day, but if you'd like to save for later, keep them in a sealed container.

I hope you all liked this recipe and hopefully try it out!
