Introduction: Caramel Filled Snickerdoodles

A great combination of caramel and cookie, especially delicious on cold winter nights with a warm cup of tea.




Step 1: Ingredients

1/2 cup butter or margarine
1 cup sugar
1/4 tsp baking soda
1/4 tsp cream of tartar
1 egg
1/2 tsp vanilla
1 1/2 cups flour
2 Tbsp sugar
1 tsp ground cinnamon
1 pkg caramels, unwrapped

Step 2: Making the Dough

In a medium bowl beat the butter margarine with an electric mixer for 30 seconds.

Add the 1 cup of sugar, baking soda and cream of tartar.

Beat until combined, scraping sides of bowl.

Beat in egg and vanilla untill combined.

Mix in the flour.

Chill dough 1 hour.


Step 3: Preparing to Bake

Preheat oven to 375F

Combine the 2 Tbsp of sugar and 1 tsp cinnamon in a bowl

Shape dough into 1 inch balls

Press a caramel piece into the center or each dough ball

Form dough around caramel and roll into a ball making sure caramel piece is completely enclosed

Roll each dough ball in the cinnamon sugar mixture

Step 4: Baking the Cookies

Place dough 2 inches apart on ungreased cookie sheet

Bake at 375 for 11 minutes

Remove cookie sheet from oven and let cookies cool for a few minutes

Transfer to a wire rack to finish cooling

If the caramel gets hard after the cookies are cooled; throw them in the microwave for about 10 seconds and they soften right up. And the cookies are warm just like they are right out of the oven
