Introduction: Chocolate Easter Cookies With Almond Butter Filling

Although jelly beans are usually my favorite Spring treat, these chocolate Easter cookies with almond butter filling are now a close second!

Step 1: Make Chocolate Cookies

Make chocolate cookies using LilaLoa’s Chocolate Cookie recipe.

Roll out the dough a little thinner than usual since the cookies will be multi-layer, 1/8" thick is good.

Use an egg or bunny cookie cutter to cut your cookie shapes.

Step 2: Make Chocolate Royal Icing

Make icing using Sweet Sugarbelle’s Chocolate Royal Icing.

Add brown and black food coloring to get a few different shades of brown to work with and decorate the top layer of your cookies.

Step 3: Make Almond Butter Filling

Almond Butter Filling

Ingredients
3 tablespoons butter
1 cup almond butter
2/3 cup powdered sugar
1 teaspoon vanilla extract

Directions
1. Beat together the butter and almond butter until combined and smooth.
2. Sift the powdered sugar into the bowl and beat again for a couple of minutes.
3. Mix in vanilla extract.

Step 4: Assemble Your Cookies

Assemble your cookies by spreading almond butter filling in the center and sealing the edges with chocolate royal icing.
