Introduction: Garlic and Herb Seared Scallops

This is a delicious recipe that's easy to make and sure to impress your special someone for a fun date night at home ;) It's perfect paired with some toast and a glass of wine for a simple yet sophisticated dinner.

Step 1: Ingredients

Recipe for 5 large scallops

-5 large fresh scallops

-1 large clove of garlic, chopped finely

-1 tsp chopped oregano (fresh)

-1 tsp chopped cilantro (fresh)

-1 tsp chopped basil (fresh)

-1/2 a lemon (You want to make a couple thin slices and then cut these slices into little triangles as shown in the picture. The remaining wedge will be squeezed on top of the cooked scallops)

-1 Tbsp butter

-salt & pepper

Note: if fresh herbs are unavailable, you can substitute 1/4 tsp of each herb dried.

Step 2: Infuse the Butter

Melt the butter in a small-medium skillet and add in garlic, 1/2 the chopped herbs, and a pinch of salt and pepper. Gently stir over high heat.

Let the mixture cook until the garlic begins to brown and the butter is fragrant

Step 3: Cook the Scallops

Place the scallops in the pan making sure that they are not touching each other. Cook for 1-2 minutes on the first side until the bottoms are browned. Flip the scallops and put a lid on the pan. Let the scallops cook another minute before removing the lid and turning off the heat. Covering the pan ensures that the whole body of the scallops is warmed, but the short cooking time allows for the formation of a crispy crust on each scallop while the inside remains smooth and juicy. Finish by squeezing the lemon over the scallops.

Step 4: Enjoy Your Juicy Little Scallops!

To plate the scallops, arrange the scallops on a plate and top each with a pinch of the chopped herbs and 2 little triangular lemon slices. Add some mixed greens on the side and serve with some crostini for a light and fancy dinner.
