Introduction: White Chocolate Whipped Cream Cookies: Snack to Dessert

First off an apology. Many of you will wonder why I am apologising an will be sitting thinking " just get to the recipe" but I feel I must apologise for being away so long. It has been months and although I doubt anyone has been on the edge of their seat waiting for another of my creations, to anyone who has I apologise dearly. Now that's over and done with onwards to the cookies.

For this recipe you will need:

Equipment:
-A pot and glass bowl- to melt chocolate- could be replaced with any other means of melting chocolate
-A knife
-A large mixing bowl
-An electric mixer or whisk- electric recommended
-A baking tray
-A tea spoon
-Measuring scales
-A spatula
-Cookie cutters or a glass
-Rolling pin
-Greaseproof paper

Ingredients:
-Flour- 150g and more for dusting
-Butter- 100g and more for greasing
-Brown sugar- 150g
-One egg
-Vanilla flavouring- 1 teaspoon
-Baking powder/ bicarbonate of soda- 1 teaspoon
-Salt- A pinch
-White chocolate chips- a 100g bar chopped up
-Whipped cream- preferably fresh
-White chocolate- 200g for decoration
-Pink or red edible sparkles


Step 1: The Cookies

The first component of this cookie dessert creation is the cookie. For the cookie we need from our ingredient list:

-100g of butter
-150g of brown sugar
-150g of plain flour
-One egg
-1 teaspoon of vanilla extract
-1 teaspoon of bicarbonate of soda
-A pinch of salt
-100g of chocolate chips

Start by preheating your oven to 170 degrees Celsius or 340 Fahrenheit. I would suggest checking the temperature with a thermometer but it is not needed.

Now mix together the butter and brown sugar until it resembles the first picture.

Next add the egg and vanilla, mix, add the flour salt and bicarbonate until it is a dough.

If it is too sticky add more flour.

Once a dough is reached add the chocolate chips. It should resemble picture 6

Now dust your work surface with flour and roll the dough to desired thickness.

Cut this with your cookie cutter or glass to get nicely shaped cookies as in pictures 6 and 7

Place the cookies on to a baking tray lined with greased greaseproof paper.

Bake your cookies for 8-12 minutes or until the edges are golden brown.

When removed from the oven they will feel soft but will harden when cooled.


Step 2: Chocolate Decorations

The next component is the chocolate decorations. I decided to use white chocolate to keep the light, clean them going but any would do. I would be lying if I said this didn't take many attempts to find a perfect method but I believe I have.

To create the smashed chocolate shards was easy.

Chocolate was melted in a bowl above a pan of boiling water. I used 200g for all my cookies.

The chocolate was then spread thin onto a piece of grease proof paper and then placed in a freezeer.

When removed it was smashed against a work surface.

Voila chocolate shards.



The discs on the other hand were considerably more difficult. I started by putting my glass over melted chocolate and waiting for it to set. This failed so here is the perfected method.

Once again chocolate was melted, covered in sprinkles, spread thin on grease proof and then refrigerated.

When the chocolate has set in the fridge set it on a work surface and allow to soften only enough to allow a cookie cutter to be pushed through it as in picture 3.

Then put the chocolate with the discs marked, into a freezer until solid.

Once they are solid peel the greaseproof off and you have discs.


Step 3: The Whipped Cream

As anyone who has saw any of my other cooking Instructables would know, I am mad about whipped cream but one thing that annoys me is when people make amazing desserts and then they add a can of whipped cream. It is repulsive and is just lazy as it takes minutes to make your own velvety whipped cream.

All you have to do to make whipped cream is:

Pour whipping cream into a bowl.

Add sugar until it tastes sweet enough.

Then for this recipe whisk it or mix with an electric whisk until it is smooth but quite stiff.

Step 4: Construction of the Finished Product

To construct the dessert all that needs to be done is:

For discs:
Add a table spoon of cream to the center of a cookie then push down a disc onto it to evenly distribute it.

For shards:
Put a large mound of whipped cream onto a cookie and drop a small amount of shards onto the cream
