Thank you, Ed. I appreciate your interest and your suggestions. I am not sure about the height of the pour over. That is how the stand came. I plan to make a better pour over stand myself at some point and I will keep in mind your suggestion about the height, thanks. As far as the temps, I agree propped temperature is important for a superior cup of coffee. I purchased one of those super cool laser thermometers. And perhaps I could our together an instructable on it. But for the purpose of the happiness I don't want to big the reader down with too much. After all this instructable is gear towards those who get their coffee mainly from Starbucks or from Dunkin Donuts. This is a first step towards better coffee as well as improved happiness through mindfulness.

I made this two nights in a row. The first night I used one can of tomato, the second I used two. Two cans made much sauce but I felt it tasted better in the smaller batch. However my wife didn't notice a difference. Go with your gut based on your tastes. But if you are going with two cans of tomato maybe double up the onion and garlic.
