    I've been studying the ways of permaculture and discovered a tater-like plant called the Jerusalem artichoke. It makes a pretty sunflower plant during the summer and come thanksgiving I get around 5-10lb of small knobby taters from each plant. I started with 5 now I have over 100 only using the small taters to replant and eating the rest. They can be used exactly like normal taters, just smaller. SOME people call the plant invasive, but if you want to keep them contained just pull the strays up when they get 2 foot tall before they start making more tubers. In my mind invasive food should be a good thing anyway with so many people starving. I've had them for 3 years now and have yet to have a stray.
