I make these in a slow cooker. It takes 3-4 hrs. After about 3 hrs., I add water to the slow cooker and, stirring occasionally, they get a nice candy type coating after about 45 mins. I also do Pecans the same way.I will have to try to use an oven as you did.
Roasted (Obviously not salted) or Raw Almonds??? I'm making 20lbs and want to buy the right ones. Never saw a mention of which ones to buy in any recipes online. Thanks!

I make these in bulk, and sell them i n jars for Christamas - but you don't need all these ingredients. Water, sugar, and cinnamon is all you need.I make a MAN-version with whisky and salt, and these are VERY popular!They are sweet, slightly salty, with the taste of real smokey whisky, and a drizzle of cinnamon for the festive season.I use 1 cup sugar for 3 cups of almonds, add 1 cup sugar in a medium hot cast iron pan, (some cinnamon if reqd)add a shot of smokey whisky, and i little water.let melt before adding almonds - mix so almonds are wet/sugared.Stir occasionally until moisture dissappears, they go greyish, and sugar starts sticking to almonds.Now stir faster, so sugar doesn't burn, and dont let them crackle or snap too much - then temp is too high and more stirring is needed.When almonds start to get sugar glazed look, (I take them off heat when 25-30% are brownglazed), spread them over a non-sticking cooking sheet, and sprinkle some flaky salt over - let chill. If done right, each batch should last about 15-20mins to complete i pan.Tip: When spreading out on sheet, (they are very hot!), try to spread them out so no nuts are stacked - then when the are a bit cooler, seperate them quickly wth fingers, to avoid clumps of nuts :)Enjoy!
