Certainly! You could add chopped walnuts and dried fruits for texture. It's a fun mixture to experiment with. I also roll them into little truffles/balls sometimes with different nuts on the outside for different flavors. Also, you can top it with caramel glaze instead of the chocolate glaze. It's really open to interpretation.
Feel free to improvise in any way you feel fit. You can also omit the nuts and add more cookie. Also feel free to use orange, mint or vanilla essence for a different type of flavor.
There are gluten free graham crackers like Kinnikinnick, so all you would need to do is get some of those and grind them in a food processor. You might need to adjust a little bit the water quantities depending on how absorbent the gluten-free cookies are. If I am trying a new cookie or cracker, I just start with a little less water and add if I feel it needs more. Hope this helps :)

You can use a mold (like a heart-shaped spring pan) and plastic wrap and pat it in. The bags make it easy to make layers the same thickness. You want plastic wrap at least on the bottom of the mold because the pastes are very sticky and you will not be able to remove from the mold. A lot of folks back home just make two thick layers, one dark one light, so there is lots of room for interpretation. Hope you like :)
