Intro: Chicken Fajita Burritos

Fajitas are one of my favorites – but they can be a bit difficult to make for the whole family at once. There is of course the sheet pan version of fajitas that always works. But I wanted to try something a little different and went with a burrito version, which I named a Chicken Fajita Burrito. I decided to roll the whole fajita plate into the tortilla by including the beans and rice!

Prep Time 10 minutes Cook Time 30 minutes Servings 6

Ingredients

  • 8 Tortillas burrito-sized
  • 2 cups Cheddar Cheese, shredded

For the Chicken

  • 1½ lb Chicken Tenders
  • 2 tbsp Avocado Oil
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1 tsp Salt

For the Veggies

  • 1 Red Bell Pepper, sliced
  • 1 Orange Bell Pepper, sliced
  • 1 Green Bell Pepper, sliced
  • 1 Red Onion, sliced
  • 4 Garlic Cloves, minced
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Salt
  • 1 tsp Pepper

For the Rice

  • 2 cup Long Grain Rice
  • 1 qt Chicken Broth
  • 1 4oz can Green Chilies
  • 1 15oz can Tomato Puree

For the Beans

  • 2 15oz can Whole Pinto Beans, drained
  • 1 tsp Cumin
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder

STEP 1: Start the Rice

Prepare all of the ingredients. Preheat griddle or grill pan to medium-high.

In a saucepan over medium heat, add all ingredients for the rice. Stir to combine then cover and let cook for 17 minutes. Do not remove the lid until ready to serve. Remove from heat.

STEP 2: Make the Chicken

In a bowl combine chicken ingredients. Once griddle or grill pan is hot, add chicken and cook for 7 minutes on each side. Remove from heat.

STEP 3: Get the Veggies Going

In another bowl combine veggie ingredients. Once chicken is cooked, add veggies to grill or grill pan. Cook for about 5 minutes, moving around occasionally.

STEP 4: Stir Up the Beans

In a small bowl, combine bean ingredients.

STEP 5: Build the Burrito

Once the veggies are cooked, wipe off the griddle or grill pan and warm up each tortilla (about 30-45 seconds on each side).

Built the burrito, start with a portion of rice, then cheese, a portion of beans, a portion of veggies, and lastly 2-3 pieces of chicken. Fold over ends and roll up burrito then cut on the diagonal to serve.

For the beans, heat them up in anyway?
I substituted in black beans, and heated in microwave for 2 minutes. Not sure what the metric conversion is for “2 minutes”. 😎
From the UK:
1. What are chicken tenders? Are they just chicken breast cut in strips?
2. What weight (in grams) is 2 cups of grated cheddar?
3. Are pinto beans similar to cannellini beans (which are more common here)?
4. How many millilitres is an American quart (of chicken broth)?
5. I thought thongs were a type of underwear...

Hi there! I'll do my best to answer your questions
1. The tender is also sometimes called the rib meat (it's that piece of meat under the breast next to the breast bone), a chicken finger or a chicken goujon. That said - you can totally just cut the chicken breast into strips for this one.
2. 2 cups = 400 grams
3. Flavorwise - a navy bean or black bean would be a better substitute for pinto beans but cannellini beans would work also. When I googled it, Tesco did pop up as having a can of pinto beans available in most locations.
4. 1 quart = 946 ML
5. I believe thongs are sometimes referred to as a style of underwear as well as a type of footwear, lol. This one is typo (my bad) and should read Tongs. Thanks for catching that.
