Intro: Goat Cheese Pizza

Goat cheese pizza is one of my favorite pizza recipes to make. I can't remember quite how I stumbled onto the recipe, but I think it's a variation I learned from my Aunt and Uncle during a visit to Bear Valley. The prep time is less than 10 minutes and you'll need another 15 minutes to bake it. Here are the ingredients to get you started.
  • Goat Cheese
  • Cherry or Sweet 100 Tomatoes
  • Marinated Sun Dried Tomatoes
  • Crushed Garlic
  • Olive Oil
  • Thin Boboli Crust (substitute at will)
  • Oven Pizza Stone (not required)
  • Pre-heat your oven to 425

STEP 1: Make the Sauce

In a small bowl, mix 2 tablespoons of olive oil with one teaspoon of crushed garlic. Let that stand for a little bit. Start cutting your tomatoes into halves.

STEP 2: Put It All Together

Spread the sauce evenly over the crust. Add the tomatoes. In this version, I went a little heavy on the tomatoes and used the entire pint, but I usually only use about 1/2 of a pint. Add some sun dried tomatoes. Add 2-3 oz. of goat cheese or as you like. Put it in the oven for about 15 minutes or until the goat cheese starts to brown a little.

STEP 3: Have Some Wine While It Cooks

White wine goes really well with goat cheese pizza!

STEP 4: It's Ready!

When the tips of the goat cheese are starting to brown, it's ready. If you leave it in too long, the sun dried tomatoes will also start to get burnt.

Ooo this sounds good.......with a little bit of Dave's insanity sauce in the garlic sauce (a single drop will do for the one pizza and for the bravest seekers of heat), this would be perfect....

So goat Cheese does not melt?...
Not the way that mozzarella melts. It keeps it's shape, but will melt in your mouth and burn your tongue if you're not careful.
