In a separate bowl or container, stir together buttermilk and vanilla.

STEP 5: Bake
Spoon 1-tablespoon mounds of batter onto cookie sheets. Bake until tops are puffed and cookies spring back when touched, 8-10 minutes. Transfer to a rack to cool completely.
STEP 6: Make Marshmallow Cream
For the filling, beat together butter, powdered sugar, marshmallow cream, and vanilla in a bowl with electric mixer at medium speed until smooth, about 3 minutes.
STEP 7: Assemble
Spread a rounded teaspoonful of filling on flat side of half of the cookies and use the others as tops. Some people might want to make a double batch of the marshmallow cream for double stuffed whoopie pies!
STEP 8: Eat and Enjoy!
Share with your special Valentine! Put into a special package for them only after they have dried for a few hours on the counter, otherwise they may be too moist and stick to paper, etc.
