Intro: Jalapeno Honey Cornbread

The Name says it all.

STEP 1: Ingredients

1 cup flour
1 cup yellow cornmeal
1/4 cup sugar
1 tablespoon baking powder
1 cup heavy cream (or milk)
1/4 cup (coconut) oil
1/4 cup honey
2 eggs, lightly beaten
1 jalapeno (De-seeded and chopped into tiny pieces)

STEP 2: Instructions

1.Preheat oven to 400 degrees.
2.Lightly grease baking pan.
3.Mix flour,cornmeal, sugar, and baking powder in a large bowl.
4.Add the cream, oil, honey, eggs,and chopped jalapeno and mix thoroughly
5.Pour batter into greased baking pan.
6.Bake for 20 to 25 minutes, or until a toothpick can be inserted into the center and come out clean.
7.Let cool for 10 minutes then serve.

STEP 3: The Upgrade

I like to make this dish along with my Tequila Beans. they go great together.

I love the combination! Jalapeno and honey?! Come on! Then with the beans you've got the spicy, salty, sweet, light bitter...almost umami! I'll have to try it!

Interesting mix of flavors! How would you describe the final taste?
the cornbread has a jalapeno flavor, but really isn't all that spicy. the honey gives it a sweet taste, but not to overpowering (not like cake). all in all, it is a mellow blend of sweet and spicy i guess. Mixing it with the beans is an entirely different story. the beans have a smokey, rich flavor with a bit of zip from the tequila. it makes for a interesting Mix or flavors. Hope that helps
