Intro: Peanut Butter Cheerio Bars

I had some marshmallows and extra Honey Nut Cheerios sitting around so I decided to make some bars. I've seen some different recipes online, so I just combined things I liked and went with it. These Peanut Butter Cheerio bars are gooey and very delicious :)

STEP 1: Supplies

Here is what you need to make these yourself. You can change up the proportions as much as you want. With these amounts, your bars will be fairly gooey, but they are so good it is worth the sticky fingers!

Ingredients:


  • 5c Honey Nut Cheerios - for less flavorful bars, you can use plain Cheerios
  • 1c Mini Marshmallows
  • 1/2c Peanut Butter - I don't know if Chunky PB will work, but it could be a fun experiment
  • 1/2c Honey

Utensils:


  • Sauce Pan
  • Wooden Spoon
  • Mixing Bowl
  • Measuring Cups
  • 8x8 or 9x13 Pan - I used a smaller pan so I could have thicker bars for the picture, but use a larger pan for more manageable pieces

STEP 2: Preparation

Get your bowl of 5 cups of Honey Nut Cheerios ready. Spray your pan or put down a layer of wax paper.

Once your ingredients are melted, you are going to want to work fast as everything is just so sticky.

STEP 3: Melt and Mix Ingredients

Mix your marshmallows, peanut butter, and honey in your sauce pan.

Put it on your stove on low heat. It may be tempting to turn it up, but don't. The first time I did this I used a little bit higher heat and the mixture started to burn. For a few minutes, the honey and peanut butter will mix fine, but it will look like the marshmallows aren't doing anything. Don't worry, and don't turn up the heat. For me, after a few minutes suddenly the marshmallows just went from solid to melted. So you just need to be patient.

Stir fairly frequently to make sure your mixture doesn't burn.

As soon as it is melted, mix it in with your Cheerios and when that is mixed, put it in your pan. Don't dawdle, it's all very sticky.

STEP 4: Enjoy

Let your bars sit for a bit to get harder so they don't just fall apart. You can also put them in the fridge to get them to harden a bit, but no matter what you do, they will be sticky/gooey. Just go with it.

Store extras in an airtight container.

I use rubber gloves when i am working with sticky stuff

like the blue ones from Harbor Freight.

I stick my hands in plastic food bags, like sandwich bags, then when I'm done I turn them inside out and toss. For this I'd just use a spoon to pour it all into the pan, then use my hands in the bags to spread and pat down. Don't really need fingers. The bags are like plastic mittens.

I'd leave out the honey and add butterscotch chips and a bit of butter.

I added the butterscotch chips and they taste Amazing!!
Be very careful. Peanut butter rand butterscotch are a particularly lethal and addictive combination. You could find your self eating an entire batch in one sitting.

Sounds tasty :) So would you melt the butterscotch chips with the marshmallows and peanut butter or would you add them in when you add the Cheerios so they stayed whole?

Yes, you'd melt everything together in the pot on low heat until melted, then mix with the Cheerios. Might be slightly less sticky than the honey but you'll still be licking your fingers (and you'll like it.) About 1/2 cup of peanut butter, 6 oz package of butterscotch chips, four cups mini marshmallows and half stick of butter. I usually use a microwave to make sure I don't burn anything. I microwave a minute at a time, stirring in between. I've never done it with Cheerios so you might need less marshmallows. This would be for about 6 cups of Rice Krispies. There is just something about the peanut butter and butterscotch combination that is just awesome.

can these be made without the marshmallows, or are they the glue that binds it all together?

I think you can make them without. The peanut butter also holds them together :) If you try it, let me know how it turns out!

My co-worker also makes a similar Cheerio Bar and she adds M&M's to the mixture. Good, good!

M&Ms sounds like a good addition or Reeses Pieces could be tasty too :D
