Introduction: How to Make Bacon-wrapped Chicken Pesto

Today, we are making bacon wrapped chicken pesto. Our recipe serves three to four people. And get ready to learn why harpooning is a grill masters secret.

Our recipe calls for the following ingredients:

Four to six chicken breasts, preferably organic and free range.

One package of bacon, usually 12 slices, i prefer turkey bacon, but there are many types, cuts and flavors. You'll need two slices per chicken breast.

Grill sticks for harpooning. Don't waste your time with toothpicks, we're not cooking teeth on the grill, so get some big and long sticks. I cut them in half, so use one stick per chicken breast.

Pesto, now i prefer to make my own, but you can get a store bought tub at most grocery stores. usually a tablespoon per chicken breast.
seasoning sauce - i prefer to make my own, but you can purchase many good types of sauces. 24 ounces per 6 chicken breasts.

Optional yellow onion. Friends, there is nothing better than a good grilled onion.

INSTRUCTIONS:

Line the bottom of the bowl with bacon. Pour in the seasoning sauce. Wash the chicken. Cut in half and then butterfly. Repeat. Grab some more bacon and put in on top of the chicken. Although our recipe doesn't call for it, I like to put a little piece of onion on it. I'll cut that up. Later it will be a great indicator of how the meat is cooking.

Marinate the chicken for at least 15 minutes or up to 10 hours in the refrigerator.

Now that the chicken is marinated, we can get our dish prepared.

Put a piece of bacon on a plate, then take the chicken and roll it. Grab the stick and harpoon it. Later we'll see why harpooning is so important. Don't forget to pour in all of your extra juices into the marinating bowl.

Get the temperature of your bbq between 250 and 300 degrees.

Place the chicken with the sticks paralell to the bbq. let them sit for 6-8 minutes. Flip it to the other side. Grab the marinating bowl and pour some of that liquid goodness. Let it cook for another 6-8 minutes. Put one side of the harpoon between the metal grate -- see how harpooning your meat can help you evenly cook? Use more juice if you got it, then let the meat sit for 4-5 minutes then flip to the other side and repeat.

Grab some kitchen scissors and clip a piece to check the color of the chicken. Taste it. i prefer my meat moist. it taste's great.

So remember, harpooning not only keeps the meet together, but it helps you cook the meat on all four sides. Stay away from tooth picks and go with larger sticks.
