Gluten-free recipes?

I have to follow a gluten-free diet for life, and need to learn how to do substitutions of flours and dairies to bake cakes and breads. Is this knowledge included in this course? Also, being an avid cyclist, I want to replace the expensive "energy bars" for something that can be eaten with one hand, require no refrigeration, can be stored in a jersey pocket without getting destroyed, and -again- has to be gluten-free. Am I asking too much?

Unfortunately, gluten-free baking is not covered in this course. Have you tried the 1-to-1 gluten free flours in any of your baked goods? I would suggest starting there and then you can expand what you learn about how the GF flour behaves.
