Rolling?

Is it ok if I don't have a pasta machine? Can I hand roll it?


Hi Renee,

Yes, you can make pasta without the pasta machine, but the process of hand rolling is quite onerous and takes time (and a lot of elbow grease) to get good at - which is why in the class I recommend starting out using the super easy to use pasta machine.

Because the dough is so elastic, it wants to snap back as you roll - the equivalent to two steps forward and one (sometimes two) steps back. This can be frustrating for beginners, as well as pretty tiring for the arms and back. This is the reason that I didn't cover hand rolling in the class, but if you want to give it a try, here's the how to:

1. Cut the 'rested' dough into 6 small pieces instead of the 3 I recommend for using the machine.

2. Keep one piece out and wrap the remaining 5 in plastic wrap.

3. Use your hands to flatten the piece into a disc shape.

4. Lightly dust the work surface with flour.

5. Place the dough disc on the table and starting in the center of the disc with the rolling pin, roll away from you, coming part of the way back and then away again.

6. Turn your dough 180 degrees and repeat so that you end up with an elongated oval or rounded corner rectangle.

7. Fold the dough in half and repeat the above two directions. Do this 2 more times. Keep *lightly* dusting the surface and top of dough throughout.

8. Now repeat step 5 and keep turning the dough so that you are getting it evenly flat all over. To get it thin, it helps to hold the edge of the dough with one hand while pressing down and out with the other hand in the middle of the rolling pin.

9. Keep repeating this process until you've reached the desired dough thickness.

10. Set the dough aside on a clean dish towel and let it harden for 15-20 minutes before cutting it while you roll out the rest of the dough pieces.
