how to create high voltage projects (alternative to arduino and 8085 kit)

I had been working on Arduino and 8085 microprocessor kit. However there are used for low voltage projects.

Can someone tell me how to create high voltage projects say creating a vending machine , moving a  door, programming for a high voltage ac/dc motor etc.

You can still use the arduino. You just need things like high power transistors and relays. Use the arduino to turn the relays and transistors on and off to control higher power devices. Motors need motor controllers which are often controlled by PWM signals from micro controllers like the arduino.
8085 ???????? That's nearly 40 years old. Why bother.

Anyway, the processor has nothing to do with how high a voltage you can work with, that's all down to the interfaces you employ.
