Another variation:

Peanut butter, thinly sliced apple or small chunks of apple, cinnamon and sugar.

Warm the tortilla first, then smear with peanut butter, add apple, sprinkle with c&s.

Roll and butter top & bottom, fry to a crunch on a hot griddle.

When I owned my restaurant, I had something like this. We took the tortillas cut them into triangles and deep fried them then sprinkled the Cinnamon on them then put an icing made of powdered sugar and milk over them. I called them Cimmaninies. Yes I spelled it that way. They were FREAKIN AWESOME. But every so often I wouldn't want to wait to make them in the deep fryer so I would just throw the cinnamon on it and nuke it then put the icing on afterward. God I miss them days. Anyway long story short (I know, too late) these are pretty much the same thing and take it from me they are AWESOME.
