Introduction: 5-Minute Brazilian Style Cupcake


I learned recently how to make 5-minute cupcakes, but after a little search here at Instructables, I found out that a few people had already posted the recipe.
So I thought I could add a brazilian touch.

This instructable will teach you how to make a Brazilian Style 5-Minute Cupcake.

Step 1: Ingredients


The ingredients for the cupcake are:

1x egg
1x tablespoon of cocoa powder
4x tablespoons of sugar
4x tablespoons of all-purpose flour
4x tablespoons of milk
2/3x tablespoon of margarine (2x tbsp. sunflower oil works as well)
1/2x TEAspoon of baking soda

1x 300ml microwavable mug (10 fl.oz)
or
2x medium size teacups

The ingredients for the frosting are:

1x can of sweetened condensed milk (aka Carnation or La Lechera in some parts of the US - both names are from Nestle)
2x tablespoons of cocoa powder
1x tablespoon of margarine (sunflower oil works as well)

Step 2: Making the Cupcake


In this instructable I will split the recipe in 2 small cupcakes instead of 1 big mug cake. (See step 5 to find out why)
In this case it will be better to mix the ingredients in a small bowl instead of directly in the mug.

Put the egg in the bowl and stir it well.
Put all the other ingredients and keep stirring until the margarine is almost disolved (it's ok if you get little chunks in it).
Pour the mixture in 2 cups and put it in the microwave oven for about 1 minute and 30 seconds.

After it's cooked, gently separate the cake from the cup with a knife and flip it over a plate.

As you can see in the pictures, I didn't have 2 nice shaped teacups, so I poured half of the mixture in the big mug and cooked one cake at a time.

Step 3: Frosting (Brigadeiro)


For the frosting, I'll teach how to make a brazilian style fudge called Brigadeiro.
(It's not really fudge, it's more like Mexican Cajeta, but I couldn't find an english word for that)

A-Pour all the condensed milk from the can in a medium pot.
B-Add 2 tablespoons of cocoa powder and 1 tablespoon of margarine.

C-Stir the ingredients a little bit and scrape the bottom of the pot once with the spoon to see how fast the mixture takes to come back in place. (you will use this on Step E to know when it's ready).

D-Set the stove fire at low heat and keep stirring so it won't stick to the bottom and scorch.
--Keep stirring for about 10 minutes (that’s when the 5-minute cupcake won't take 5 minutes anymore).
--You want the water from the milk to evaporate slowly so the mixture will get thicker. At some point, it will start boiling, be extra careful when this happens.

E-You know it's ready when you scrape the bottom of the pot once with the spoon and the mixture takes longer to come back in place (than it did on step C). You'll be able to “reveal” the bottom of the pot with the spoon.
Be careful, after this point, it will start scorching at the bottom, so turn off the fire and pour it in a bowl.
It doesn't seem thicker than the condensed milk itself, but once it cools down it gets there!

Step 4: Fix It Up

You can dig a hole on the top of the cake and stuff it with Brigadeiro.
Or you can just spread the Brigadeiro all over the cupcake.

If you still get Brigadeiro left over, just put the bowl in the refrigerator. It will get a little harder but it's still good for a couple of days. (I don't know how long it stays good in the refrigerator, cause in my house, it never got through the second day) =)

Step 5: Bonus (Why Small Cakes Instead of a Big One)


This is why I chose to make 2 small cupcakes instead of 1 big mug cake:
In my first cupcake attempt, it came out all weird because the mug I was using had the shape of an upside down cone!
I think it will come out good if you use a plain cylindrical mug.
--If you want to make 1 big mug cake, put the entire recipe in the microwave oven for 3 minutes.
